I currently have the sxt plus 18" wheels and am looking to change. My question is if I were to go to 19in wheels would that decrease the wheel gap while keeping the same ride height? Or would the gap remain the same and just raise the car an inch. Not looking to mess with the suspension. Also would I need new tires for the 19" wheels or would the 18" tire still work. Any advice, input, or pictures are appreciated.

The whole idea of larger diameter RIMS is just that you would HAVE to buy tires that are for the diameter of the rim. As your example 19" rims will NOT accept 18"dia tires! As rim size increases the resulting tire sidewall height decreases.
I suggest you read threads in the tire and wheel page to learn about how this works.

Welcome to the forum! You can get the larger rims and lower profile tires to get the same diameter tire and ride height. It would change the look and improve corner handling with the smaller side wall. Your ride may be a little rougher as a result.
